SWEET POTATO CURRY - I'm not sure of the original author of this recipe as I got it off my mum, but this is a delicious, filling and healthy dinner that is quick and easy to make and can be kept in the freezer for a rainy day!
INGREDIENTS : *2 cubed sweet potatos *100g Spinach * 1 red chilli *1 onion *200g dried red lentils *2 cloves crushed garlic *2 tablespoons coriander spice *2 tablespoons cumin spice *1 tablespoon curry powder *2 teaspoons vegetable stock powder (or stock cubes) *500ml boiling water *1 tin light coconut milk
1. Soften onions, garlic and chilli
2. Add spices and cook for 2mins
3. Add water, stock and coconut milk
4. Add sweet potatoes and lentils
5. Bring to the boil
6. Add spinach
7. Simmer covered for 25minutes
8. Serve with rice or whatever you fancy
This makes about 8-10 portions so for those doing Slimming World it works out about 2syns per portion for the coconut milk.
