Jumping on the lockdown bandwagon of making Dandelion honey. I was actually so, so impressed with this. I didn't expect it to turn out half as good as it did! It's very easy but takes a while.
You will need;
100-150 Dandelion heads
around 60ml lemon juice
a pinch of salt
800g sugar
2 apples
1 litre water
1. Cut the dandelion heads off with scissors in the middle of the day so the petals are fully opened to the sun. Set them aside for an hour or two to allow any creepy crawlies to crawl out before rinsing.
2. Add the water, dandelion heads, salt, lemon juice and apples to a pan and bring to the boil. Turn back and simmer for 30 minutes (lid on)
3. Strain the mixture and add the sugar to the remaining liquid. You will need to keep this on a very low heat (i.e. 2) for around 4 hours. Do not leave the room as it can boil over or burn. You can stir it within the first hour to help the sugar dissolve but do not stir after this as re-crystalisation can occur.
4. After 4 hours the mixture should have reduced by at least half or 3/4. Transfer the mixture into sterilised jars and allow it to set to its final consistency overnight.
5. Enjoy in all the ways you would normally eat honey.
